Devon Chicken Recipe

You will need :-

2 oz. butter

4 chicken joints

2 rashers streaky bacon

2 oz. onion, finely chopped

1 stick celery, sliced

1 oz. plain flour

salt and pepper

¾ pint chicken stock

3 tomatoes

 

Oven Setting:- 350°F; Gas Mark 4

 

Melt the butter in a heavy pan and fry chicken joints slowly until golden, which will take about 10 minutes. Put the chicken into a casserole. Cut the bacon into small pieces, then place the onion, celery and bacon into the fat. Cook until the onion is soft but not colored. Sprinkle in the flour and seasoning. Stir for a minute and then add the stock and continue cooking until boiling. Peel the tomatoes, cut them in quarters and remove the pips. Add to the onion mixture and cook for 5 minutes.  Pour over the chicken, cover and cook in a moderate oven (350°F; Gas Mark 4) for about 45 minutes. Serve with a sprinkling of chopped parsley.
