Cottage Gourmet Chicken Recipe

You will need :-

1 boiling chicken (about 4-5 lb.)

2 level teaspoon salt

about 2 pints cold water

1 large onion, skinned

2 medium carrots, peeled

2 sticks celery

6 pepperscorns

2 cloves

1 bay leaf

 

Sauce :-

8 oz. cottage cheese

1 pint chicken stock

2 oz. luxury margarine

2 oz. plain flour

seasoning

 

To Garnish:-

parsley

 

Cut chicken into 6-8 portions, then put joined chicken into pan, add salt and sufficient cold water to cover. Bring to the boil. Add onion and carrots, whole, cut up celery, peppercorns, cloves and bay leaf. Simmer very gently until chicken is tender, 2.5-3 hours.

 

Rub cheese through a sieve. Strain off 1 pint stock. Transfer chicken to a serving dish and keep hot. Melt margarine in a pan, add flour and cook for 1 minute. Remove from heat and gradually add stock. Re-heat, stirring, until sauce thickens, seasons, them simmer for 5 minutes. Add cottage cheese. Pour sauce over chicken. Garnish with parsley. 4-5 servings.
