Chicken with Tomatoes Recipe

You will need :-

4 chicken joints

salt and black pepper

3 tablespoons oil

4 large tomatoes

1 clove garlic

½ teaspoon each fresh thyme and basil

¼ pint white wine

12 black olives

1 teaspoon chopped parsley

 

Preparation Time:- 15 minutes

 

Cooking Time:- 35 minutes

 

Oven Setting:- 350ºF; Gas Mark 4

 

Season the chicken joints well. Heat the oil and fry the chicken for 20 minutes, turning often. Transfer to an oven-proof dish, cover and continue to cook in the oven for 10 minutes.

 

Make the sauce. Skin the tomatoes and chop them finely. Peel and crush the garlic. Fry in the remaining fat. adding the thyme, basil and wine. Bring to boil. Cook gently until soft. Add the olives and mix well.

 

Arrange the chicken on a serving dish. Pour the sauce over and sprinkle with parsley. Serve with salad. Serves 4.

 

Quick Tip

 

Instead of using fresh tomatoes, and especially when these are more expensive than usual, use canned tomatoes. A 14 oz. can will do nicely.
