Chicken Simla Recipe

You will need :-

4 roasting chicken joints

1 oz. flour

salt and pepper

2 tablespoons oil

2 oz. butter

1 chicken stock cube

½ pint hot water

2 tablespoons mild mustard

2 teaspoons Worcestershire sauce

¼ pint double dairy cream

For the garnish:-

1 oz. flaked, toasted almonds

4 baked peeled tomatoes, watercress

 

Preparation Time:- 10 minutes

 

Cooking Time:- 1½ hours

 

Oven Setting:- 325°F, Gas Mark 3

 

Toss chicken joints in flour, seasoned with salt and pepper. Heat oil and butter in a pan and fry joints on both sides for about 15 minutes until golden and tender. Arrange in a shallow, ovenproof dish.

 

Dissolve stock cube in hot water. Stir in mustard and Worcestershire sauce. Pour over chicken joints.

 

Cover and bake for 1 hour. Stir in cream and serve sprinkled with almonds. Garnish with baked tomatoes and watercress. Serves 4.

 

Quick Tip

 

For a quick chicken vol-au-vent filling. Heat up a can of condensed mushroom soup with some diced, cooked chicken. Stir in ¼ pint dairy cream and spoon mixture into heated vol-au-vent cases.
