Chicken Rissoles Recipe

You will need :-

1 lb. cooked chicken

4 oz. fresh white breadcrumbs

salt and pepper

1 teaspoon lemon juice

2 eggs

approx. 2 oz. brown breadcrumbs deep fat for frying

¼ lb. button mushrooms

few sprigs parsley

 

Preparation Time:- 20 minutes

 

Cooking Time:- 20 minutes

 

Mince the chicken finely and add to the breadcrumbs. Season well, add lemon juice and 1 whole egg. Beat well until smooth. The mixture should be stiff.

 

Divide the mixture into 8 portions. Make into a sausage shape and dip in beaten egg. Toss in brown breadcrumbs. Do this twice.

 

Fry the rissoles, three at the time, in deep fat until golden brown and crisp. Drain on crumpled kitchen paper. Serve hot or cold, garnished with mushrooms and parsley. Serves 4.

 

Quick Tip

 

If you find that the mixture is too soft to make into the required shapes, put it into the refrigerator for about 30 minutes before shaping into rissoles.
