Chicken with Rice Recipe |

You will need :- 1 boiling chicken 2 pints water salt and pepper pinch mace 8 oz. long grain rice 1 tablespoon chopped parsley 2 oz. butter, melted
Make sure the chicken is trussed as for roasting. Put into a large pan with the water, salt, pepper and pinch of mace. Cover and simmer gently for 3 hours. Stir in the rice and continue cooking gently for 30 minutes. Take out the chicken, place on a dish and keep hot. Strain the rice and arrange around the chicken. Sprinkle with parsley and melted butter. If liked, a little of the cooking liquid may be served separately as gravy.
For added color and flavor, vegetables may be added 15 minutes before the end of cooking time. Try young small carrots, peas or broad beans, and serve them mixed with the rice.
