Chicken with Mushrooms Recipe

You will need :-

4 chicken joints

3 oz. butter

4 oz. mushrooms, sliced

1 small onion, chopped

½ pint stock

1 tablespoon tomato puree

¼ teaspoon chopped herbs

1 teaspoon chopped parsley

 

Preparation Time:- 20 minutes

 

Cooking Time:- 35 minutes

 

Season chicken pieces and fry in butter for 20 minutes or until tender. Add mushrooms and cook for 2-3 minutes. Remove chicken pieces and keep hot.

 

Add the onion to the pan, cook until transparent. Add the stock and boil up, reduce the heat and cook for 5 minutes. Add the tomatoes puree and herbs. Correct the seasoning and cook for 5 minutes longer.

 

Arrange the chicken on a serving dish and pour the sauce over. Sprinkle with chopped parsley. Serves 4.

 

Quick Tip

 

If using button mushrooms, there is no need even to slice them. Just wash, dry and add whole.
