Chicken Mornay Recipe

You will need :-

1 whole chicken

salt and pepper

4 oz. butter

1 oz. flour

½ pint milk

2 oz. cheese, grated

1 teaspoon French mustard

1 tablespoon crushed cornflakes

 

Preparation Time:- 20 minutes

 

Cooking Time:- 30 minutes

 

Oven Setting:- 400ºF; Gas Mark 6

 

Joint the chicken into four, season well and place in an ovenproof dish. Dot with 2 oz. butter and bake in the centre of the oven for 20 minutes.

 

Make the white sauce. Melt 1 oz. butter, add flour, mix well and cook for 2-3 minutes. Remove from heat and gradually add milk. Add 1 oz. cheese and the mustard, mix well and cook for 2-3 minutes. Beat in the remaining butter a little at a time. Cook gently for 5 minutes.

 

Pour off excess liquid from chicken, cover with sauce, and sprinkle with cornflakes and remaining cheese. Grill for 5-10 minutes or until bubbling. Serve very hot. Serves 4.

 

Quick Tip

 

To give an even more savoury flavor to this dish, crushed potato crisps can be used instead of cornflakes.
