Chicken Mayonnaise Recipe

You will need :-

1 lb. cold, cooked chicken

1 bunch spring onions

½ pint mayonnaise

1 lettuce

8 tomato quarters

dash paprika

parsley

 

Preparation Time:- 20 minutes

 

Cut the chicken into neat pieces. Chop the onions finely and mix well with the chicken and half the mayonnaise.

 

Wash and dry the lettuce. Arrange leaves on a serving dish. Pile the chicken on top of the lettuce and coat with the remaining mayonnaise, leaving a border of lettuce showing.

 

Arrange the tomato quarters around the base of the mayonnaise. Sprinkle the top of the pyramid with paprika. Serve very cold. Garnish with parsley. Serves 4.

 

Quick Tip

 

A quick way to make mayonnaise if you have a liquidizer: Put a whole egg, seasoning, 1 tablespoon lemon juice or vinegar into the liquidizer, switch on, pour up to ¼ pint oil gently through the top on to mixture. It takes only 10 seconds.
