Chicken in Lemon Sauce Recipe

You will need :-

4 chicken breasts

salt and pepper

3 oz. butter

1 tablespoon sherry (optional)

1 teaspoon grated lemon rind

1 tablespoon lemon juice

¼ pint single dairy cream

3 oz. Lancashire cheese, crumbled

For the garnish:-

pimento strips

parsley sprigs

 

Preparation Time:- 20 minutes

 

Cooking Time:- 15 minutes

 

Bone cut chicken breasts (see Quick Tip below), and season with salt and pepper. Fry in 2 oz. of the butter for about 8 minutes until golden. Place in ovenproof serving dish and keep warm.

 

Add sherry and lemon rind and juice and cook for a minute, stirring. Slowly add the cream, stirring. Heat but do not allow to boil. Pour over chicken.

 

Dot chicken breasts with remaining butter, sprinkle with cheese and grill until golden. Garnish each chicken breast with a pimento cross and parsley sprigs. Serves 4.

 

Quick Tip

 

To bone out chicken breast first cut off two wing joints. Using a small sharp knife, cut between the bone and the flesh of the breast. Scrape meat off the bone from remaining wing point.
