Chicken and Celery Casserole Recipe |

You will need :- 4 chicken quarters 6 oz. spaghetti 4 oz. onion 4 sticks celery 4 oz. butter 1½ oz. plain flour 2 teaspoons paprika salt ¾ pint chicken stock 2 oz. cheese, grated
Oven Setting:- 350°F; Gas Mark 4
Cut each chicken quarter in half. Cook the spaghetti in boiling salted water for 12 minutes. Drain it and chop roughly. Meanwhile, chop the onion and celery and fry them lightly 1 oz. of the butter. Put into a shallow casserole dish.
Mix together the flour, paprika and salt and coat the chicken pieces with this mixture. Melt 2 oz. of the butter and fry the chicken pieces until they are lightly browned. Put the pieces into the casserole and add the stock. Cover the dish and cook in a moderate oven (350°F; Gas Mark 4) for 1 hour. Sprinkle the spaghetti into the gaps between the chicken pieces. Sprinkle the cheese over the top, dot with remaining butter and return to the oven for 15 minutes to crisp and brown the cheese and spaghetti. This is very good with a green salad.
