Chicken with Barbecue Sauce Recipe

You will need :-

1½ butter

1 chicken

salt and pepper

1 small onion

4 tablespoons tomato ketchup

2 tablespoons vinegar

2 tablespoons mango chutney

¼ teaspoon French mustard

1 teaspoon castor sugar

1 tablespoon Worcestershire sauce

 

Rub the inside of the slow cooker with a little of the butter, then preheat for 20 minutes on high. Wipe the chicken and season inside and out with a little salt and pepper. Melt the remaining butter in a frying pan and brown the chicken all over. Put in the slow cooker. Chop the onion, add to the butter and cook for 3 minutes without coloring. Add the remaining ingredients (chop the chutney into small pieces if necessary). Bring to the boil, pour over the chicken, cover and cook on high for 4 hours, basting occasionally.
