Spare Rib Chops with Almonds Recipe

You will need :-

1 tablespoon mustard

1 tablespoon brown sugar

4 spare rib pork chops

1 oz. almonds, shredded

salt and pepper

1 12 oz. packet frozen chips

lard for frying

 

Preparation Time:- 5 minutes

 

Cooking Time:- 15 minutes

 

Mix the mustard and sugar together and rub over the chops. Grill on both sides until tender, about 12 minutes altogether. Sprinkle almonds over the chops and season with salt and pepper.

 

Return the chops to the grill to brown the almonds. Meanwhile, fry the frozen chips in lard.

 

When cooked, let the chips drain on crumpled kitchen paper. Place the chops on a serving dish surrounded by the chips and serve with a green vegetable. Serves 4.

 

Quick Tip

 

When making your own potato chips fry briskly in deep fat until pale golden brown. Remove and drain crumpled absorbent paper, fry again in a very hot fat. Drain on fresh paper. This ensures that the chips are crisp and golden brown.
