Pork Tandoori Recipe

You will need.....       4 pork chops

                               8 oz. Patna rice

                               1/4 teaspoon powdered saffron

                               For the marinade :

                               2 5oz. cartons natural yogurt

Preparation Time      1/2 teaspoon ground ginger

10 minutes plus          3/4 tablespoon paprika pepper           

6-8 hours to marinate  1/4 teaspoon garlic powder or

                               1 clove garlic, finely crushed                             

Cooking Time            4 days leaves

1 hour 15 minutes       6 peppercorns

                               1 tablespoons tomato puree

Oven setting             grated zest of 1 lemon

375ºF ;  Gas Mark 5    1 teaspoon salt 

                             

                             

                              

Prick pork chops well with a fork or skewer and place in a casserole dish. Place ingredients for marinade in a bowl or jug and mix well. Pour over pork chops making sure that they are all covered with the marinade.

 

Cove dish with foil or lid and leave for 6-8 hours. At the end of this time remove bay leaves and peppercorns. Remove lid from casserole dish and baste pork. Re-covered and bake in a moderate oven for about 1 1/4 hours, basting occasionally until all the marinade is used. 15-20 minutes before the end of cooking time, cook rice in boiling salted water with the saffron.

 

Drain rice and place on round serving dish. Top with the chops and serve. Peas can be added to the rice if liked. Serves 4

 

Quick Tip

 

When peeling and chopping vegetables prepare sufficient for at least two meals. Keep part in a sealed polythene bag in a cool place, preferably a refrigerator. This will help to save time.
