Pork and Pineapple Curry Recipe |

You will need :- 2 lb. lean pork 1½ oz. plain flour 1½ teaspoons salt 1½ lard 1 large onion 3 teaspoons hot curry powder 1 tablespoon paprika ½ chicken stock 1 tablespoon mango chutney 1 teaspoon Worcestershire sauce 1 lb can pineapple cubes 2 bay leaves
Preheat the slow cooker on high for 20 minutes. Cut the pork into ¾ inch cubes and toss in the flour and salt. Melt the lard in a pan and brown the meat. Remove the pork from the fat. Chop the onion finely and fry in the fat until soft. Stir in the curry powder and paprika and fry for 2 minutes, then return the meat to the pan. Stir well and cook for a few minutes. Add the remaining ingredients to the pan, including the pineapple syrup. Bring to the boil. Turn all the ingredients into slow cooker. Cover and cook for 30 minutes on high. Turn to low and cook for 4½ hours until tender. Take out the bay leaves before serving.
