Pork Parcels Recipe

You will need :-

4 oz. long-grain rice

1 5 oz. packet frozen sweetcorn

1 5 oz. packet frozen peas

4 spring onion

salt and pepper to taste

4 pork chops

1 tablespoon soy sauce

4 tablespoons cider

 

Preparation Time:- 20 minutes

 

Cooking Time:- 40 minutes

 

Oven Setting:- 350°F; Gas Mark 4

 

Cook the rice, put into a basin. Meanwhile cook the sweetcorn and peas in boiling salted water for 2 minutes. Clean and chop the onions, add to the rice and mix well together. Season to taste.

 

Cut 4 large squares of aluminum foil and put a chop on to each piece. Sprinkle well with soy sauce. Put one quarter of the mixture on top of each chop. Add a spoonful of cider.

 

Wrap into a parcel and place on a tin. Bake in a moderate oven for about 40 minutes. Serve direct from the foil on the serving plate. Serves 4.

 

Quick Tip

 

Aluminum cooking foil makes a completely airtight parcel, retaining all the moisture and delicate flavor of the food inside. Fold each join twice to make it air-tight. Use foil also making lids for otherwise lidless containers.
