Pork in Mushroom Sauce Recipe

You will need :-

4 pieces pork fillet

1 oz. flour

salt and pepper

2 oz. butter

4 oz. button mushrooms, thinly sliced

1 x 16 oz. can carrots

¼ pint double dairy cream

1 tablespoon chopped chives

 

Preparation Time:- 10 minutes

 

Cooking Time:- 15 minutes

 

Bat out pork fillet until thin and coat in flour, seasoned with salt and pepper. Fry in butter for about 5 minutes on each side or until cooked. Place on serving dish and keep warm.

 

Add mushrooms to butter in pan and fry for 3-4 minutes or until cooked. Stir in any remaining flour and cook for a minute. Drain carrots and dice.

 

Remove from heat and stir in cream and a third of the carrots. Reheat very gently until piping hot. Do not allow to boil. Season to taste and pour over pork. Garnish with piles of remaining heated carrots, sprinkled with chives. Serves 4.

 

Quick Tip

 

For a quick snack, cook button mushrooms in butter add double daily cream and heap on to toast.
