Pork in a Blanket Recipe

You will need.....       3/4 lb. pork fillet, cut in 1/2-inch slices

                               2 red-skinned eating apples

                               1 large onion, peeled

                               2 oz. butter or margarine

Preparation Time      1 oz. flour

10 minutes                1 chicken stock cube

                               1/4 pint milk

Cooking Time           salt and pepper to taste

20 minutes                1 packet instant potato (for 4)

                            

Peel, core and chop one apple. Chop the onion finely. Melt the butter in a frying pan, place slice pork in the centre and chopped onion round the edge. Cook very gently, covered, for 5 minutes. Turn pork slices, stir onions, and add chopped apple. Cover and cook for another 5 minutes. Remove pork to warm serving dish.

 

Stir flour into pan, cook for 2 minutes. Dissolve chicken stock cube in 1/4-pinch boiling water, add to pan with the milk. Cook until smooth and thick, stirring gently. Taste and correct seasoning. Pour sauce over pork.

 

Make up mashed potato, according to direction on packet. Pipe or spread round serving dish, slide under grill for 2 minutes to brown. Meanwhile core and slice remaining apple. Use to decorate. Serves 4.

 

Quick Tip

 

To make mashed potato smooth and creamy, beat in some butter an egg yolk. If the potato is to be used for piping, sieve it first, as even very tiny lumps will tend to clog the tube.
