Pork Fillet with Macaroni Stroganoff Recipe

You will need :-

1¼ pork fillet

2 oz. butter

4 oz. mushrooms, sliced

8 oz. button onions

1 tablespoon plain flour

2½ oz. can tomato puree

sugar

salt and pepper

¼ pint soured cream

8 oz. elbow macaroni

1 tablespoon oil or butter

 

Garnish

bay leaves or parsley

 

Trim the pork fillet and cut into slices about ½ inch thick. Fry quickly in heated butter until lightly browned, then remove from the pan. Fry the mushrooms and onions until just turning color, then remove from heat and add the flour and tomato puree. Cook gently, stirring, and season with sugar, salt and pepper. Blend in the sour cream and add the meat. If necessary, add a little stock or water so that the meat is covered. Simmer gently  for 10 minutes or until the meat is tender.

 

Meanwhile, boil 4 pints of well salted water. Add the macaroni and boil for 14 minutes until just tender. Drain well and toss in the spoonful of oil or butter. Arrange in a border round a serving dish, spoon the meat into the centre and garnish with bay leaves or finely chopped parsley.
