Pork Barbecue Style Recipe

You will need.....       4 pork chops

                               1/2 level teaspoons each salt and pepper

                               1/2 level teaspoons castor sugar

                               1/2 level teaspoons ground ginger

                               1 oz. butter

                               1 oz flour

Preparation Time      For the barbecue sauce:

15 minutes                1-2 tablespoons chilli sauce

                               1 tablespoons mushroom ketchup

Cooking Time           1 tablespoons Worcestershire sauce

30 minutes                2 level teaspoons castor sugar

Oven setting            2 tablespoons tomato ketchup

375ºF; Gas Mark 5      1 teaspoon soy sauce

                              2 clove garlic, crushed

                              2 bay leaves

                            

Trim pork chops carefully. Mix together salt, pepper, sugar and ginger and rub over chops. Heat the butter in a heavy meat tin and add the chops. Brown in a moderately hot oven, turning chops once to brown on both sides.

 

Meanwhile, mix together thoroughly all the ingredients for the barbecue sauce.

 

When chops are brown pour off all the fat from baking tin, pour sauce over and cover with a lid of foil. Bake for 20 to 30 minutes, basting occasionally, until tender. Then arrange on a serving dish and spoon sauce over. Decorate with parsley. Serves 4

 

Quick Tip

 

Due to modern refrigeration pork has no specific season, so forget the old story of eating pork only when there is an R in the month.
