Pig in the Middle Recipe

You will need.....       3 oz. mushrooms

                               2 oz. lard

                               4 spare rib or neck pork chops

Preparation Time      2 oz. white breadcrumbs

10 minutes                1 oz. suet

                               salt and pepper

Cooking Time           1 egg, lightly beaten

30 minutes                1/2 pint batter (made from 4. oz. flour, pinch salt,

                               1 egg and 1/2 pint milk and water)

Oven setting            few sprigs parsley

425ºF; Gas Mark 7     

                            

Chop the mushrooms. Melt the lard in an ovenproof dish. Trim and season the chops and place in the melted fat. Mix the breadcrumbs, suet and mushrooms together, season well and bind with the egg. Put a portion on top of each chop and cook in a hot oven for 5 minutes.

 

Mix the batter ingredients together well. Remove dish from oven, pour batter round chops at once and return to the oven for about 20 minutes.

 

Decorate with parsley and serve at once with a green vegetable and sauté potatoes. Serves 4

 

Quick Tip

 

A yorkshire pudding batter will rise better and become crisper if the batter is poured directly into very hot fat, and put straight into a hot oven without any delay. An extra egg or even an egg yolk makes it richer.
