Pan Fried Pork Recipe

You will need.....       1 lb. shoulder or belly pork, thinly sliced

                               1 egg, beaten and seasoned with salt and pepper

                               1 packet sage and onion stuffing or

Preparation Time      4 oz. medium oatmeal

10 minutes                3 oz. lard

                               3/4 lb. potatoes, boiled

Cooking Time           1 large onion

20 minutes                1 heaped tablespoon chopped parsley

                            

Flatten the slices of pork with a rolling pin and cut into portions. Dip each slice into the seasoned beaten egg and toss in the dry stuffing or oatmeal. Fry in a little hot lard on both sides until brown and tender (about 15 minutes). Place in a hot serving dish.

 

Meanwhile, cut the potatoes into 1/2-inch dice. Peel and chop the onion finely. Melt rest of lard, cook onions gently until just brown but not crisp. Stir in potatoes, increase heat and cook, stirring occasionally, until potatoes are brown. Sprinkle over the meat.

 

Decorate with parsley and serve with a green vegetable. Serves 4.

 

Quick Tip

 

To make sauté potatoes: boil the potatoes until almost cooked. Strain and cool. Cut into 1/4-inch slices and fry gently in a little butter. If liked, add a little finely chopped onion and sprinkle with chopped parsley.
