Oriental Honeyed Pork Recipe

You will need :-

¾ lb. pork fillet

2 level dessertspoons seasoned cornflour

6 tablespoons corn oil

1 clove garlic, crushed (optional)

1 medium sweet green pepper

1 8 oz. can pineapple chunks

3 mushrooms, peeled and sliced

2 ripe tomatoes, quartered

 

For the sauce:-

1 dessertspoon soy sauce

1 chicken stock cube

2 tablespoons honey

 

Preparation Time:- 10 minutes

 

Cooking Time:- 15 minutes

 

Cut the pork into 1-inch cubes and toss in the seasoned cornflour. Remove stalk and seeds from pepper and chop. Drain pineapple cubes, reserving juice.

 

Heat the garlic (if used) in the oil, fry pork cubes briskly until brown on all sides. Lower heat, add chopped pepper and continue cooking over gentle heat for 10 minutes, adding pineapple chunks, mushrooms and tomatoes for last 4 minutes. Transfer to a warm serving dish.

 

Meanwhile, make sauce by dissolving chicken stock cube in ½ pint boiling water, mix with honey and soy sauce. Blend rest of cornflour with a little pineapple juice, add to mixture. Bring to the boil, cook for 3 minutes, stirring all the time. Pour over the meat in the serving dish. Serves 4.

 

Quick Tip

 

To make seasoned flour: to 8 oz. plain flour, add 1 level tablespoon salt and ¼ level teaspoon pepper. Place in a screwtop jar, shake well. Use as required.
