March Pork Casserole Recipe

You will need.....       1 small sweet green pepper

                               2 oz. bacon dripping

                               1 onion, peeled and chopped

                               1 leek, washed and chopped                         

Preparation Time      2 oz. button mushrooms

10 minutes                1 teaspoon curry powder

                               1/2 teaspoon salt

Cooking Time           1/2 teaspoon pepper

1 hour 45 minutes       1 oz. flour

                               1.5 lb. hand or shoulder pork, diced

Oven setting            1 8 oz. can tomatoes

335ºF; Gas Mark 3      pinch mixed sweet herbs                            

                           

Remove stalk and seeds from the pepper and chop it. Melt the fat and fry the onion, leek, pepper and mushrooms for 3 minutes. Transfer to a casserole.

 

Add the curry powder, salt and pepper to the flour, and then toss the pork in this mixture. Fry the coated pork for 5 minutes, stirring well, then put into the casserole with the vegetables, tomatoes and herbs.

 

Cover tightly and cook for 13/4 hours in a very moderate oven. Serve with jacket potatoes (see Quick Tip below). Serve 4.

 

Quick Tip

 

To prepare jacket potatoes: scrub and dry equal-sized potatoes. Prick with a fork and brush with oil. Place on a baking tray and bake in hot oven for 1.5 hours or until tender. Cut a cross on the top, squeeze open and top with butter.
