Harvest Home Casserole Recipe

You will need :-

2 onions

2 oz. lard

2 sweet green peppers

1 lb. baby marrows

3 mushrooms, peeled and chopped

1 lb. belly pork, diced

garlic salt

salt and pepper to taste

1 tablespoon tomato puree

½ chicken stock cube

 

Preparation Time:- 5 minutes

 

Cooking Time:- 1 hour

 

Peel and slice the onions. Melt the lard and fry them in a saucepan for 5 minutes. Keep saucepan covered so onions remain soft.

 

Remove stalks and seeds from the peppers and chop. Wash and cut up unskinned marrow into small pieces, and add these, with the mushrooms and pork, to the saucepan. Stir well and season to taste. Mix the tomato puree with the stock and add to the saucepan.

 

Cover with lid and simmer gently for 1 hour. This dish can also be cooked slowly in the oven. Serves 4.

 

Quick Tip

 

To retain juiciness and flavor of meat: coat in seasoned flour and fry gently to seal before adding liquid to the stew. If meat is naturally juicy, add flour when stew is cooked so that the meat juices enrich the gravy, instead of coating and frying first.
