Curried Pork Chops and Apricots Recipe

You will need :-

2 tablespoons shortening

6 pork loin or rib chops, 1 inch thick

1 can (1 pound 1 ounce) apricot halves, drained

1 medium onion, finely chopped (about 1/2 cup)

1/4 cup butter or margarine

1/4 cup all-purpose flour

1 teaspoon salt

1 teaspoon curry powder

2 cups milk

1 can (6 ounces) sliced mushrooms, drained

 

Melt shortening in skillet; brown chops over medium heat. Place in ungreased baking dish, 13.5 x 9 x 2 inches; arrange apricot halves cut side down on meat.

 

In medium skillet, cook and stir onion in butter until onion is tender. Stir in flour, salt and curry powder. Cook over low heat, stirring until mixture is bubbly. Remove from heat. Stir in milk gradually. Heat to boiling, stirring constantly. Boil and stir 1 minute. Stir in mushrooms; pour over chops.

 

Cover tightly; bake in 350ºF oven 45 minutes or until meat is done. Uncover: bake 15 minutes longer. 6 servings.
