Crunchy Stuffed Pork Recipe

You will need.....       3 lb. join belly pork with skin

                               4 oz. soft white breadcrumbs

                               1 onion, peeled and grated

                               1 lemon rind, grated

Preparation Time      1 stick celery, washed and chopped

15 minutes                1/2 teaspoon nutmeg

                               1 oz. walnuts, chopped

Cooking Time           2 oz. seedless raisins

2 hours                     1 egg

                               1 oz. butter, melted

Oven setting            salt and pepper

375ºF; Gas Mark 5      lard                            

                           

Score the pork skin and remove the bones from the joint.

 

To make the stuffing, mix together remaining ingredients except lard and season to taste. Flatten the meat, skin side down and spread with the stuffing. Roll and secure with a skewer. Put the joint in roasting in, brush the skin with a little melted lard and sprinkle liberally with salt. Roast for 30 minutes to the pound and 30 minutes over in a moderately hot oven.

 

Serve with apple sauce, buttered carrots and sprouts. Serves 4-6.

 

Quick Tip

 

When using stale breadcrumbs in stuffing, leave soaking in a little milk for about an hour before use. Squeeze moisture out before mixing. This improves the flavor and texture.
