Celebration Pork Recipe

You will need :-

4¼ lb. loin of pork with skin

melted lard

salt

8 eating apples

6 oz. granulated sugar

1 pint water

pink food coloring

few sprigs parsley

 

Preparation Time:- 5 minutes

 

Cooking Time:- 2 hours

 

Oven Setting:- 350°F; Gas Mark 4

 

Have the loin of pork chinned and the skin scored. Put the joint in a roasting tin with the skin side upwards. Brush and sprinkle with salt (see Quick Tip below). Roast in a moderate oven for approximately 2 hours.

 

Meanwhile prepare the sugared apples for decoration. Peel and core the apples. Dissolve the sugar in the water over a gentle heat, then bring to boil. Add 1 teaspoon pink food coloring. Poach apples gently in the syrup until tender and well colored (about 20 minutes). Remove on to a plate.

 

Boil syrup rapidly to reduce, and pour over the apples. Serve joint surrounded with sugared apples and decorate with parsley. Serves 4.

 

Quick Tip

 

To ensure that the pork crackling in crisp, brush well with oil and sprinkle with salt before cooking. The skin can be scored in parallel line ¼ inch apart or in a diamond pattern.
