You will need :- 1¼ sparerib or shoulder pork 8 oz. large pork sausages 1 onion, chopped 3 carrots 3 sticks celery 1 tablespoon plain flour 1 pint chicken stock ½ teaspoon rosemary 1 teaspoon soy sauce salt and pepper 7-8 thick slices from a French loaf French mustard
Oven Setting:- 350°F; Gas Mark 4
Cut the meat into 1-inch cubes. Fry the pork and sausages together gently in their own fat until the sausages are lightly browned. Put the pork into a shallow casserole and add the sausages, cut into 1-inch pieces. Slice the carrots and chop the celery. Fry the onion, carrot and celery together in the pork fat for 5 minutes. Stir in the flour and blend in the stock. Bring to the boil, stirring well, and add all the remaining ingredients except the bread and mustard. Pour over the meat, cover and cook in a moderate oven (350°F; Gas Mark 4) for 45 minutes. Spread the bread slices liberally with down into the casserole, and return to the oven without a lid for 45 minutes.
