Tuna Fish Pie Recipe

You will need.....       1.5 oz. butter

                               1.5 oz. plain flour

                               3/4 pint milk

                               2 hard-boiled eggs, chopped

                               1 x 7 oz. can tuna

Preparation Time      grated rind of 1 lemon

20 minutes                13 oz. packet frozen puff pastry

                              

Cooking Time           

25 minutes                

 

Oven setting           

425ºF; Gas Mark 7     

                            

Melt butter and stir in flour. Mix well and cook for 2-3 minutes. Remove from heat and gradually add milk. Return from heat and bring to the boil stirring until thickened. Add egg, flaked tuna fish and lemon rind. Mix well.

 

Roll out pastry and cut into two 8-inch by 4-inch oblongs. Place one on a baking sheet. Cover with filling, damp edges of the pastry and cover with other oblong. Make slits across the top. Press edges together to seal. Trim and flute. Brush with egg. Bake in centre of oven for 25 minutes.

 

Serve very hot. Serves 4.

 

Quick Tip

 

To prevent dark rings forming round egg yolks, drain off boiling water, crack the shells immediately and then cover with cold running water until the eggs are completely cold.
