Tomato Bacon and Egg Pies Recipe

You will need.....       8 oz. short crust pastry

                               2 eggs

                               3 oz. bacon rashers, chopped

                               3 tomatoes, skinned

                               3 oz. Cheddar cheese, grated

Preparation Time      1/4 teaspoon dry mustard

10 minutes                1 small tin evaporated milk

                               

Cooking Time           

30 minutes                

 

Oven setting           

400ºF; Gas Mark 6     

                            

Roll out pastry to 1/8-inch thickness. Cut out 6 rounds to fit 6 old saucers. Trim the edges.

 

Beat the eggs and add bacon. Chop tomatoes roughly and add to egg with cheese, mustard and milk. Pour into the prepared cases and bake in centre of oven for 30 minutes.

 

Serve hot or cold. Serves 4.

 

Quick Tip

 

Use sharp kitchen scissors instead of a knife for removing the bacon rind. Scissors are easier for removing the small bones as well.
