Spinach Cups Recipe

You will need.....       8 slices white bread

                               2 oz. butter

                               5 oz. packet frozen spinach

                               1 oz. margarine

                               2 eggs

Preparation Time      4 oz. cottage cheese

20 minutes                1 oz. Parmesan cheese

                              1/2 oz. powdered milk and 1/4 pint water

Cooking Time           salt and pepper

35 minutes                pinch paprika

                              2 tomatoes, cut into quarters

Oven setting           

350ºF; Gas Mark 4     

                            

Remove crusts. Butter each slice and place, buttered side down, in 8 patty tins.

 

Cook spinach in the margarine, drain and place in cup cases spreading it up the sides to make a nest.

 

Whisk eggs and all other ingredients (except tomatoes) together. Pour into cases. Bake in centre of moderate oven for 20 minutes. Garnish cups with tomato quarters. Serve very hot.

Serves 4.

 

Quick Tip

 

For a better texture use whole leaf spinach. If you are using fresh spinach you will need to cook about 1 ib. to obtain he amount required for the recipe. Cook gently in a little butter. Do not add any water as the spinach will provide enough of its own liquid.
