Picnic Loaf Recipe

You will need.....       1 onion

                               1 lb. belly of pork

                               4 oz. ham

                               chicken stock cube made up

                               with 1/2 pint water

Preparation Time      12 oz. plain water

30 minutes                 salt

                               4 oz. lard

Cooking Time            1/4 pint hot water

1 hour                       4 hard-boiled eggs                

                               little milk for brushing

Oven setting           

400ºF; Gas Mark 6     

                            

Chop onion finely. Mince pork and ham. Mix with onion and stock. Sift flour and salt into a large bowl. Heat lard and water until boiling. Add flour and beat well until the mixture forms a ball. Separate one third and keep hot.

 

Knead the rest lightly until smooth. Shape into a greased 1 lb. loaf tin, fill with half the meat mixture, place eggs on top and cover with rest of the mixture.

 

Shape remaining dough to fix the top of the tin. Press the edges together and flute. Brush with milk and bake in centre of oven for 1 hour. Serve cold with tomato salad (see Quick Tip below).

Serves 4.

 

Quick Tip

 

To make a quick tomato salad-skin and slice the tomatoes, put them into shallow dish. Mix 3 parts oil with 1 part vinegar or lemon juice, season and shake in a screw-top jar. Pour over the tomatoes and sprinkle with fresh or dried basil.
