Mushroom Wheel Recipe

You will need.....       4 oz. short crust pastry

                               1 onion

                               2 oz. mushrooms

                               1 oz. butter

                               7 oz. can luncheon meat

Preparation Time      2 eggs

20 minutes                salt and pepper

                              1 small can evaporated milk

Cooking Time           watercress

30 minutes                

 

Oven setting            

400ºF; Gas Mark 6

350ºF; Gas Mark 4

                                                         

Line a 7-inch flan ring with pastry. Trim edges and prick base.

 

Chop onion finely. Wash and slice mushrooms. Fry both in butter until soft. Place in base of flan case. Cut luncheon meat into fingers and arrange like the spokes of a wheel over vegetables.

 

Beat eggs until smooth, season and add milk. Pour over the mixture and bake in centre of oven for 15 minutes. Reduce heat and cook for 15 minutes. Serve cold with salad. Serves 4.

 

Quick Tip

 

To give the flan a shinny appearance, brush with little beaten egg yolk just before baking.
