Mushroom Cream Flan Recipe

You will need.....       For the pastry:

                               6 oz. plain flour

                               pinch salt

                               1.5 oz. butter, cut into small pieces

                               1.5 oz. lard, cut into small pieces

Preparation Time      For the filling:

25 minutes                 2 hard-boiled eggs

                               2 teaspoons lemon juice

Cooking Time            3 oz. packet cream cheese

20 minutes                 4 oz. mushrooms

                               1 table spoon milk

Oven setting             1/2 oz. butter

400ºF; Gas Mark 6       1 green pepper

                                1 tablespoon oil

                            

Sift flour and salt into a bowl, add both fats and rub in until mixture resembles fine breadcrumbs. Add enough water to make a stiff paste. Roll out to fit an 8-inch flan ring or baking tin. Line ring, trim edges and bake blind for 20 minutes. Allow to cool.

 

Chops eggs and mix with lemon juice and cheese. Wash and slice mushrooms, cook in milk and butter until soft. Wash and core pepper, cut into strips and fry in oil until soft. Drain mushrooms and pepper on kitchen paper.

 

Spread cheese mixture into flan case and arrange mushrooms and pepper over the top. Serves 4.

 

Quick Tip

 

If you cut the fat into the flour with two knives before rubbing, you will find that it rubs in much more quickly.
