Macaroon Mincemeat Tarts Recipe

You will need.....       6 oz. plain flour

                               pinch salt

                               3 oz. pre-whipped fat

                               2 tablespoons water

                               3 tablespoons mincemeat

Preparation Time      2 eggs whites

15 minutes                3 oz. castor sugar

                               3 oz. ground almonds

Cooking Time            few drops almond essence

30 minutes                

 

Oven setting            

375ºF; Gas Mark 5

                                                           

Put flour, salt, fat and water into a large bowl, mixing to a dough with a fork. Turn on to a floured surface and knead lightly until smooth. Roll out pastry using 1.5-inch round cutter, cut out 40 rounds. Line 8 patty tins with 5 rounds each to make flower shapes. Bake in centre of oven for 10 minutes.

 

Spread base of each tartlet with mincemeat. Whisk egg whites until stiff. Fold in sugar, almonds and almond essence. Pile on to mincemeat and sprinkle with flaked almonds if liked.

 

Bake in centre of oven for 20 minutes. Serve with thick cream.

Serves 4.

 

Quick Tip

 

These tarts can be varied by using the following mixture, which makes a very good alternative to mincemeat: the juice and the grated rind of 1 lemon mixed with 4 tablespoons lemon curd.
