Lambs and Mushrooms Pie Recipe

You will need.....       1 Spanish onion

                               4 oz. mushrooms

                               1 oz. butter

                               1 lb. lamb

                               1/2 pint beef stock

Preparation Time      salt and pepper

20 minutes                pinch mace

                              4 oz. frozen puff pastry

Cooking Time           1 egg, beaten

60 minutes                

 

Oven setting           

400ºF; Gas Mark 6     

350ºF; Gas Mark 4

                            

Peel and chop onion. Wash and roughly chop mushrooms. Fry both gently in butter until soft.

 

Cut meat into 1-inch pieces and add to pan. Cook for 10 minutes. Add stock and seasoning. Cover and simmer for 20 minutes.

 

Place mixture in pie dish, cover with pastry, trim edges and flute. Brush with beaten egg and bake in centre of oven for 30 minutes. Reduce temperature to 350ºF; Gas Mark 4 after 15 minutes.

Serves 4.

 

Quick Tip

 

Left-over cooked lamb can also be used effectively for this recipe. Chop up the lamb and cook it gently for five minutes with the mushroom mixture.
