Gougere Recipe

You will need.....       6 oz. plain flour

                               salt and pepper

                               1/2 pint water

                               2 oz. butter

                               3 eggs

Preparation Time      1/2 lb. leeks

20 minutes                 2 oz. butter

                               1/2 pint milk

Cooking Time            pinch dry mustard

50 minutes                 2 oz. grated cheese

                           

Oven setting           

400ºF; Gas Mark 6      

                            

Sift together 5 oz. flour and salt. Bring water and butter to the boil, add flour and beat well until smooth and mixture forms a ball. Add eggs one at a time, beating until smooth after each addition. Spread a little of the mixture in an ovenproof dish. Pipe the rest around the edge.

 

Wash and slice leeks. Fry for 5 minutes in butter. Add remaining flour, mix well and cook for 2-3 minutes. Remove from the heat and gradually add milk. Return to heat and bring to the boil, stirring all the time until slightly thickened. Add mustard and cheese.

 

Pour mixture into centre of the flan and bake for 40 minutes. Serves 4.

 

Quick Tip

 

This mixture could be spread and piped on to a sheet of well-greased foil on a baking sheet instead of being cooked in a dish. Put the filling in before cooking, to speed up the preparation.
