Danish Flan Recipe

You will need.....       6 oz. short crust pastry

                               12 oz. can chopped ham with pork

                               6 gherkins

                               1/2 teaspoon mustards

                               pinch pepper

Preparation Time      pinch nutmeg

25 minutes                 1/2 oz. gelatin

                               6 oz. can cream

Cooking Time            3 egg whites

20 minutes                 1 red pepper, cut into rings

                               1 green pepper, cut into rings

Oven setting             1 small can corn

400ºF; Gas Mark 6       few pickled onions

                                                           

Roll out pastry to fit an 8-inch flan tin. Trim the edges and bake blind for 20 minutes. Cool.

 

Chop the meat finely. Chop 3 gherkins and add to the meat with mustard, pepper and nutmeg. Dissolve gelatin in 2 tablespoons hot water. Add to the mixture with the cream. Mix well. Whisk egg whites and fold into the mixture when beginning to set. Pile into prepared flan case.

 

Arrange red and green pepper rings, corn and onions in a decorative pattern round the flan. Garnish top of flan with gherkin fan (see Quick Tip below). Serve very cold.

Serves 4.

 

Quick Tip

 

To make gherkin fan: cut narrow strips lengthwise with a sharp knife to about 1/2-inch form the base. Then spread gently into fan shape.
