Curry and Rice Ring Recipe |

You will need :- 6 oz. Patna rice salt and pepper 1 oz. butter 4 oz. bacon 1 banana, sliced 1 packet white sauce mix 2 teaspoons curry powder 12 oz. cold cooked chicken 5 oz. sweet corn, drained
Preparation Time:- 20 minutes
Cooking Time:- 25 minutes
Cook the rice in a large saucepan of salted, boiling water for 12 minutes. Drain, mix with salt, pepper and butter. Press into 8½ inch sponge flan tin, Keep hot.
Remove bacon rind, cut bacon into strips and fry gently in own fat. Drain and reserve a few pieces for garnish. Fry banana in remaining bacon fat. Keep a few pieces for garnish. Make up the sauce as directed, add curry powder and cook for 5 minutes. Add chicken, bacon, banana and sweet corn. Heat through.
Turn the rice mould on to a large serving dish, pour sauce mixture into the center and garnish with remaining bacon and banana. Serves 4.
Quick Tip
The rice mould can be made up two days in advance if necessary. Store it in its tin, wrapped in aluminum foil, or a polythene bag, in the refrigerator.
