Asparagus Wheel Flan Recipe

You will need :-

8 oz. short crust pastry

1 oz. butter or margarine

1 oz. flour

1/4 pint milk

1 15 oz. can green asparagus spears

salt and pepper to taste

2 oz. Cheddar cheese, grated

 

Preparation Time :- 15 minutes

 

Cooking Time :- 30 minutes

 

Oven Setting :-

375ºF; Gas Mark 5

400ºF; Gas Mark 6

 

Roll out pastry thinly. Line an 8 inch flan ring with the pastry and bake 'blind' (see Quick Tip below). Bake for 25 minutes altogether in a moderately hot oven.

 

Melt the butter, stir in the flour to form a roux (see Quick Tip, recipe Creamy Smoked Haddock). Cook, stirring, over a gentle heat for 2 minutes, remove from heat. Make up milk to 1/2 pint with liquid from can of asparagus. Season to taste. Add gradually to roux stirring all the time. Continue stirring, until sauce thickens, over a gentle heat.

 

Cool slightly, pour into flan, sprinkle half the cheese over, arrange the asparagus spears to form spokes of a wheel, and sprinkle over rest of the cheese. Return to a hot oven for a few minutes. Serves 4.

 

Quick Tip

 

To bake blind: prick bottom of flan to allow trapped air to escape. Place a circle of greaseproof paper on base. Cover with dried beans, rice or small crust of bread. Remove paper and beans when the pastry is half cooked.
