Apple Meringue Recipe

You will need.....         3 eggs

                                 5 oz. castor sugar

                                 1 oz. plain flour

                                 2 teaspoons cocoa

                                 1 lb. cooking apples

Preparation Time        few cherries

20 minutes                  few pieces angelica

Oven setting                 

400ºF; Gas Mark 6     

                            

Whisk 1 egg and 1 oz. castor sugar together until thick enough to leave an impression of the whisk for a few seconds. Fold in flour and cocoa powder. Turn into a greased and floured 6-inch flan tin. Bake in centre of oven for 8 minutes. Turn on to a wire rack and cool.

 

Peel and core apples. Stew in a very little water until pulpy. Sweeten to taste. Separate remaining eggs. Beat yolks into the cooled apple mixture. Pour into the flan case and place on a fireproof plate.

 

Whisk egg whites until stiff and fold in remaining sugar. Pile on top of the apples and bake in centre of oven for 10 minutes. Decorate with cherries and angelica.

Serves 4.

 

Quick Tip

 

To ensure that the meringue is stiff enough, whisk the whites until standing up the peaks. Start tilting the basin and shake gently-the whites will stay put if stiff enough. If the whites come away from the bowl, whisk a little longer.
