Spaghetti with Basil Recipe

Fresh basil, with its delightful flavor and spicy fragrance, adds the perfect finishing touch to a simple tomato sauce for spaghetti.

 

Lunch or supper:- Serves 4

 

Overall Timing:-  35 minutes

 

Equipment:- 2 saucepans, sieve

 

Freezing :- Not recommended

 

Ingredients:-

1 onion

1 tablespoon olive oil

2 oz. butter

1 lb. plum tomatoes or 14 oz. can of tomatoes

salt

freshly ground black pepper

12 oz. spaghetti

10 basil leaves

3 tablespoons grated Parmesan

 

Method:-

1. Peel and finely chop the onion. Heat the oil and half the butter in a saucepan, add the onion and fry gently till transparent.

 

2. Blanch, peel and chop the fresh tomatoes (or drain and chop canned tomatoes). Add to the onion with salt and pepper. Bring to the boil, stirring to break up the tomatoes. Cover and simmer gently for 15 minutes.

 

3. Meanwhile, cook the spaghetti in boiling salted water till al dente.

 

4. Drain the spaghetti thoroughly. Return to the pan and add the remaining butter and basil leaves. Toss gently over a low heat till spaghetti is coated.

 

5. Rub the tomato sauce through a sieve and season to taste. Arrange spaghetti in a warmed serving dish and pour the hot sauce over. Sprinkle with Parmesan and toss lightly before serving.
