Pork and Tomato Savoury Recipe


You will need.....     12 oz. spaghetti

                             1 oz. pork dripping

                             1 onion

                             4 oz. belly of pork

                             1 lb. tomatoes, skinned

Preparation Time    4 oz. grated Parmesan cheese

Cook the spaghetti in a large saucepan of salted, boiling water for 12 minutes, or until tender. Drain and keep hot in a large serving dish.

 

Meanwhile make the sauce. Melt dripping and fry finely chopped onion for a few minutes. Cut pork into tiny strips and fry until browned. Cut tomatoes into rough pieces and add to pan. Season well. Cook 10 minutes, stirring to break up the tomatoes.

 

Pour sauce over the spaghetti and serve immediately. Hand cheese separately.

Serves 4.

 

Quick Tip

 

To remove tomato skins if unpeeled tomatoes are used: at the end of the cooking time boil the mixture rapidly for a few minutes. The skins will rise to the top and can be skimmed off with a perforated spoon.
