Herby Macaroni with Tomatoes Recipe

It takes very little to dress up macaroni to make a mouthwatering meal. This simple rustic dish, for example, is inexpensive but filling. A mixture of chopped parsley and basil is used to flavor the pasta, though other herbs-marjoram, thyme or fines herbes-could be used instead.

 

Lunch or supper:- Serves 4

Oven Setting:- 350°F; Gas Mark 4

 

Equipment:- Ovenproof dish, saucepan

 

Freezing :- Not recommended

 

Ingredients:-

 

1 lb. ripe tomatoes

1 garlic clove

2 tablespoons chopped parsley

2 tablespoons chopped basil

salt

freshly ground black pepper

¼ olive oil

12 oz. long macaroni

 

Method:-

1. Preheat oven to 350°G Gas 4.

 

2. Blanch, peel and thickly slice tomatoes. Place in ovenproof dish with peeled and crushed garlic, parsley and basil. Season and pour oil over. Cover and bake in the center of oven for 20 minutes.

 

3. Meanwhile, place macaroni in saucepan of boiling salted water and cook till al dente.

 

4. Drain macaroni and add to tomatoes. Mix well, cover, place in oven for a further 10 minutes to heat through. Serve immediately with a side dish of grated Parmesan.
