Welsh Lamb Casserole Recipe

You will need :-

1½ boneless leg lamb

1 oz. seasoned flour

1 oz. lard

1 lb. leeks

8 oz. carrots

15 oz. can vegetable soup

2 tablespoons Worcestershire sauce

salt and pepper

 

Oven Setting:-  375°F; Gas Mark 5

 

Trim any fat from the lamb and cut the meat into 1½ inch cubes. Coat them lightly in the seasoned flour and fry in the lard until brown. Put the meat into an ovenproof casserole. Clean and slice the leeks and carrots, and add to the meat. Pour the soap and sauce and mix well. Season to taste. Cook in a moderately hot oven (375°F; Gas Mark 5) for 2 hours.
