Sweet Pepper Casserole Recipe |

You will need :- 8 lamb cutlets 1 lb. onions, chopped 2 oz. butter 1 tablespoon oil 1 green sweet pepper 8 oz. can tomatoes ½ teaspoon castor sugar 1 chicken stock cube salt and pepper pinch marjoram 4 small potatoes
Oven Setting:- 350°F; Gas Mark 4
Put the cutlets under a hot grill for 5 minutes, turning once. Put into a casserole and keep hot. To make the sauce, chop the onions and fry in the butter and oil until transparent. Add the green pepper cut into strips, the tomatoes, sugar and the stock cube dissolved in ¼ pint boiling water. Add to the casserole with the seasoning, marjoram and sliced potatoes. Cook in a moderate oven (350°F; Gas Mark 4) for 30 minutes. This is particularly delicious if new potatoes are used, and more new potatoes with other vegetables can be served with the casserole.
