Roast Lamb lyonnaise Recipe

You will need.....       1.5 lb potatoes, peeled

                                8 oz. onions, sliced

                               2 oz. dripping

                               3 lb leg lamb

                               salt pepper              

Preparation Time      1 or 2 cloves garlic

10 minutes                       

                              

Cooking Time           

2 hours

                              

Oven setting         

35oºF ;  Gas Mark  4 

                            

Cut potatoes into 0.5 inch thick slices. Arrange onions in a heavy ovenproof dish. Put potato slices, overlapping slightly.

 

Spread dripping over lamb and season with salt & pepper. Cut garlic in small pieces and insert pieces in fat of lamb. Place joint on top of potatoes in tin.

 

Roast in a moderate oven, allowing 30 minutes to the pound plus 30 minutes over. Baste from time to time. Remove the joint from tin and place in a serving dish. Surround with potatoes and onions. Serves 4 -6

 

Quick Tip

 

If preparing this dish well beforehand keep potato slices covered with cold water till the joint is about to go in the oven. Use a heavy ovenproof dish otherwise the potato slices will brown too quickly .
