Monday Pie Recipe

You will need.....       1 small onion, peeled and chopped

                               2 oz. mushrooms, sliced

                               1/2 oz. dripping

Preparation Time      1 lb. cooked lamb, minced

5 minutes                  1/2 teaspoon Worcestershire sauce

                               salt and pepper to taste

Cooking Time            1/2 pint gravy

45 minutes                 1 lb. potatoes, boiled and mashed

                               1 egg lightly beaten

Oven setting            

400ºF;  Gas Mark 6

                            

Fry the onion and mushrooms for a few minutes in the dripping. Reserve a few mushroom slices for decoration. Add the lamb, Worcestershire sauce, salt, pepper and gravy. Mix well and place in an ovenproof dish.

 

Pile the mashed potato on top and rough up with fork-or pipe in on with a large forcing bag or tube. Brush the top with beaten egg (see Quick Tip below).

 

Cook in a moderately hot oven for about 40 minutes until golden brown. Decorate with mushroom slices and return to the oven to reheat for a few minutes. Serves 4

 

Quick Tip

 

To give a golden brown finish to any potato topping and likewise to pastry, brush with a beaten egg yolk before putting in the oven. If no egg yolk is available, milk can be used though the result is not so golden.
