Lamb Chops with Spinach Recipe |

You will need :- 3 lb. spinach salt and pepper ¼ teaspoon grated nutmeg ¼ pint double dairy cream 8 lamb chops 4 tomatoes, halved 2 oz. butter
Preparation Time:- 15 minutes
Cooking Time:- 20 minutes
Wash spinach in several changes of water. Discard any discolored leaves and tough stalks. Put into a large pan without water and sprinkle in 1 teaspoon salt. Heat gently, pushing leaves down very well in the pan. When liquid is running from spinach, cover and bring to the boil. Simmer gently for about 10 minutes or until tender.
Sieve spinach or put into a blender. Season with salt and pepper and stir in nutmeg and cream. Reheat very gently, stirring. Turn on to serving dish. Meanwhile, cook chops.
Dot lamb chops and tomatoes with butter and season with salt and pepper. Grill chops for 10 minutes or until tender, turning once and grill tomatoes until soft. Arrange chops on the bed of spinach with the tomatoes. Serves 4.
Quick Tip
Tie thick spinach stalks in bundles with string. Cook in boiling, salted water for about 25 minutes or until tender. Serve with plenty of melted butter.
